Falafel Gyros

Here’s my go-to falafel gyros recipe!
My favorite part about food blogs is when they say “Here’s an easy after-work meal” and then start chopping fifteen vegetables. So I bring you… an easy after-work meal, please don’t forget your cutting board and knife.
I grabbed my ingredients from Costco and Trader Joe’s. I don’t go to Trader Joe’s too often, but I love to stock up on some time-saving staples when I do. For this recipe, you can get everything from Trader Joe’s—pita, veggies, falafel, chicken shawarma, feta, and tzatziki (vegan or not). We always keep Costco naan stocked in the freezer, so I usually swap that in for the pita.
If you’re making your own tzatziki
I recommend making it the night before so the flavors can marinate—or at least start with it first so it has time to chill. You can also swap tzatziki for sour cream or Greek yogurt.
Steps
Prep your Greek salad – Chop your veggies however you like. Cover and refrigerate.
Bake the falafel – Follow the package instructions (I use about 1.5 per pita).
Cook the chicken – Cook it on medium until it’s cooked through (or 165°F internally if you’re checking).
Stack it up – Pita (or naan), a schmear of tzatziki, chicken or falafel, Greek salad, greens of your choice, more tzatziki if you’re into it, and hot sauce! My favorites: Cholula, Valentina, or Chili Gods (local to California).
You’ll start to learn that my meals are made up. I just use what I have on hand. I almost never make a meal with the exact same ingredients each time—just mostly the same. This one is my general formula for a quick, cozy dinner.
This meal is like a warm hug—delicious and not too time-consuming.
Bonus: There are always leftovers! The next day, I throw the lettuce and Greek salad into a container, pack a side of tzatziki and falafel, and—of course—don’t forget the hot sauce.

Naan or Pita
Tzatziki Sauce – or make your own with:
Yogurt
Garlic
Lemon juice
Olive oil
Grated or chopped cucumber
Fresh dill
Salt
Falafel or Shawarma - or both!
Greek Salad – cucumber, red onion, tomato, feta, garlic, dill, olive oil, red wine vinegar, salt, pepper
Optional add-ins: bell pepper, avocado, Kalamata olives
Greens – romaine, kale, arugula, spinach, etc.
